Serving Suggestions
Grilled Chicken Salad
Add either apples, strawberries or raspberries with candied
pecans to mesclun greens, top with crumbled goat cheese. Add mandarin
oranges for color and grilled chicken breast to serve as an entrée.
Drizzle with May’s Unique Vinaigrette.
Rice and Shrimp Salad
While rice is cooking, steam shelled,
deveined shrimp. While shrimp is still warm, cut in half lengthwise and
toss with May's Unique Vinaigrette to marinate. When rice and shrimp are
at room temperature, combine and add chopped celery, sliced green
onions, and roasted red peppers. (Add more May's if needed to moisten
rice.) Stir gently to mix and refrigerate until ready to serve.
Oriental Chicken Salad
Mixed greens topped with mandarin
oranges, sugar snap peas, bean sprouts, and chopped celery.
Add grilled chicken breast and sprinkle with Chinese noodles and
toasted almonds. Drizzle
with May's Unique Vinaigrette.
Pasta Salad
Cook the pasta and while still warm toss with
May's unique vinaigrette. When pasta is cool, add sliced celery,
broccoli crowns (cut into small pieces), grape tomatoes and bacon bits.
Stir gently. Refrigerate until ready to serve.
Spinach Salad
Mix fresh spinach with chopped tomatoes or tomato wedges, crumbled
cooked bacon, sliced
mushrooms, crumbled feta or blue cheese, top with hard boiled egg slices, drizzle with
May's Unique Vinaigrette. Grilled
chicken breast may be added to serve as an entrée.
Allen's Nicoise Salad
On a bed of greens,
preferably mesclun, center on plate Ahi Tuna (6 oz) that has been
grilled (rare to medium rare) and basted with May's Unique Vinaigrette.
Add to plate one hard boiled egg quartered, 3 oz of Haricot Vert( blanched),
red tomato with skin removed, a red potato, boiled and quartered and a
few Nicoise Olives. Lightly dress these ingredients with May's Unique
Vinaigrette. Salt and pepper to taste.
Veggies
Asparagus spears (blanched), button mushrooms
or artichoke hearts are excellent marinated in May's Unique Vinaigrette.
Marinade
Chicken breasts, rib eye steaks, skewers of
shrimp or scallops are excellent marinated in May's Unique Vinaigrette.
Grill, broil or pan sauté.
